For red Burgundy, use vintage quality to judge ripeness, tannin shape and freshness, then narrow by producer and village. Cote de Nuits tends to carry the highest ceiling for ageworthy Pinot Noir, while Cote de Beaune can be more fragrant and delicate. For white Burgundy, freshness and bottle condition are especially important, particularly with older bottles.
